So…I’ve been diligently eating lean and clean and feeling good for a few weeks now. Yes, I realize I’m still in the Honeymoon phase of change.  I KNOW whereof I speak re: honeymoons.

Personal History – After decades of fighting and quitting and losing and gaining I chose in 2011 to have a gastric sleeve.  BEST DECISION FOR ME.  In 18 months I was down 103 – 107 lbs, but holding steady at -103, and feeling so comfortable in my skin. I KNEW I could manage this body forever. And Life laughed….FFWD to July 2105 and I’m hauling around 25-30 MORE lbs.  Oops, I haven’t been taking care of my bidness… knaw’wha  I’m sayin’?

Last night, the family was not interested in reheating veg and lean meat. No prob I said. UNTIL….

You guessed it!  Pizza!  Holy shit I was almost in tears.  Tempted, and betrayed by the scents of garlic, tomatoes and cheese. Lured to the edge by toasty bread and the prospect of cold pizza breakfast.

BUT the story has a happy ending. Knowing I couldn’t cheat his early, and I admit to do the Rocky Balboa dance in my head, I enjoyed my turkey, Brussels sprouts and baked potato without butter or cheese or sour cream & chives, plotting today’s lunch.

imageZucchini noodles! Garlic! Tomatoes! Herbs! Spices! And you know what??  It was delicious.  YAY!  No, it wasn’t fettuccine swimming in a buttery cheese sauce, but so what?  It satisfied the desire for those pizza flavors. The “noodle” texture was great, with the bonus of twirling it on my fork. Topped with a chicken breast seared in the remnant olive oil, herbs and spices, my craving for pizza was satisfied without the guilt or belching.

It’s Summer….enjoy the overflow of gardens and veg stands. This recipe serves 1 person generously.

2 cups zucchini noodles, I used a vegetable peeler

2T olive oil

1T crushed garlic

1/2 C tomatoes, I used drained canned diced

crushed red pepper flakes

salt & pepper

1tsp commercial dried Italian herb blend

1T fresh grated Parmesan cheese

4 oz boneless skinless chicken breast, seasoned with garlic salt or your season of choice

In a non-stick pan (A MUST imho) heat 1 T of oil on med heat, add noodles and toss to coat in the hot oil. When they are hot add garlic, tomatoes, a pinch of red pepper flakes and a pinch of salt. Continue to cook until noodles are soft & noodley and tomatoes are heated through.

Plate the vegetables, sprinkle with Italian seasoning and Parmesan cheese.  Set aside.

Add remaining tablespoon of oil to the pan OR spray with nonstick spray, add chicken. Cook about 4 min each side or until done. You can place the hot breast on the noodles, let it rest and slice it before topping noodles (see photo), the hot chicken will warm the noodles, or serve side by side (reheat noodles if you do this).
