The Taste of Summer

This is going to be a hodgepodge I’m afraid.
Instead of my usual Thursday morning Activeweah, I am wearing my honey-making clothes today. That is, stuff that absorbs sweat efficiently and goes straight into the washing machine. Shoes included. This might be my last honey production operation — I’m down to one hive, and keep expecting disaster to strike it, but it just keeps plugging away — so I’m savoring not just this incredibly rich batch the bees have made, but the process. In the past, this was a two-person job that my Darling Husband and I did together. Now, I’m working out how to do it all by myself. Here is what the new batch looks like…
While we’re on the subject of food, and we often are around here, I’ve got a couple of recipes for you. Cooking for one, I tend to be a one-dish dinner kind of person. And in the Summer, I absolutely relish having fresh vegetables from the garden. Right now the Ronde de Nice zucchinis are starting to come in, I love them so.
My fast, easy and delicious preparation for these zooks is to slice them along with a yellow onion, maybe add a clove of minced garlic, and sauté them in extra virgin olive oil with Kosher salt and fresh ground pepper (to taste) until they’re just golden and still have what I call “integrity” – not too soft. This time, I added some fresh thyme and chopped chives from the herb garden.
And dinner is served!
This season, I’ve been seeing recipes for grilled or roasted radishes. I like radishes! How much better might they be if they’re roasted, I wondered? So, I bought some local, organic radishes and went with this Epicurious recipe, which I can recommend to you.
I didn’t have the pretty different colored ones that Epicurious used, but mine worked really well. I also amped up the lemon juice because I love a lot of lemon flavor with browned butter. Next time, instead of olive oil and butter, I’m going to use duck fat. This was lunch yesterday.
Now I’m off to try K. R. Brorman’s cauliflower rice!
What are your favorite Summer veggies? Any good recipes to share?

Your zucchini sounds yummy! I’m heading to Florida tomorrow and I’m hoping that I can get lots of fresh veggies from farm stands while I’m there. I’ll also get to play in Mom’s newly remodeled kitchen! (Yours is still the one to beat, but hers is still better than my Barbie-sized version by a mile! 😀 )

I am always in awe at the creations you achieve in that Barbie kitchen! Have a great trip to FL!

My lovely Kansas City neighbor used to slice radishes paper thin and then make them into a sandwich with French bread, mayo and of course, butter on the bread. Almost as good as my cucumber sandwiches that have a touch of cider vinegar first!

I loooove radish sandwiches. And cucumber anything.
